pumpkin spice smoothie

With the artist’s palette of colors on the trees and in the autumn sky, and with Halloween around the corner, pumpkin everything has been on my mind! While the words “pumpkin spice latte” and the thought of pumpkin flavored syrup and cow’s milk are enough to make my stomach turn…I do need my dose of fall flavors! In search of a healthy way to get my pumpkin fix, I tried my hand at Angela Liddon’s autumn inspired snack and was so pleased with the results that this has been my breakfast (and midday snack) for days! With banana and real pumpkin, this treat packs of healthy dose of vitamin B6, A and C, folate, iron, potassium and dietary fiber. I omitted the blackstrap molasses because I had none on hand, but will definitely include in the future for the iron content. I also added raw cacao nibs for extra potassium and fiber and because….chocolate?? This is a great pick me up with a cup of green tea on a fall morning!

Ingredients

1-2 T pure maple syrup
1/2 T blackstrap molasses
1/2 c rolled oats
2 c almond milk
1 c canned pumpkin (I used Farmer’s Market brand, non-GMO, organic and BPA free liner)
2 T chia seeds
1 banana, frozen
2 t cinammon
1/2 t ground ginger
1/4 t ground nutmeg

*optional 1 T raw cacao nibs

Combine all ingredients in a high-speed blender. Blend until smooth. Add a few ice cubes for a more frosty treat!

Pour into your favorite Mason or Ball jar and take it to go!
